Steam the raw banana in pressure cooker
Once it cools peel and mash
Add salt, corn flour, crushed green chillies and ginger with salt
Make small round koftas
Roll them in semolina and pan fry in appe pan
Alternatively you can deep fry them by coating them with maida ans water slurry
For the saag bring water to a boil
Add the palak leaves and let them boil for 5 minutes
Immediately drain and transfer the leaves to ice cold water
This helps retain the green colour
Puree them in a blender along with green chillies to a smooth consistency
Heat ghee in a pan
Add the cumin seeds and hing
Once it splutters add the puree and sautee well
Add the corn flour to milk and mix well without lumps
Add this to the pan and mix everything well
Check for salt and spice and add if necessary
Bring everything to a boil
Just before serving add the koftas and let them soak up the saag flavour.
Optionally you can give one more tadka with ghee and red chillies
